I'm learning some new words about zodiac signs and I would like to know if the below words are correct :
signs (singular/plural) person (singular/plural)
Aries/Aries an Aries/ two Aries
Taurus/Tauruses a Taurus/two Tauruses
Gemini/Geminis a Gemini/two Geminis
Cancer/Cancers a Cancer/two Cancers
Leo/Leos a Leo/two Leos
Virgo/Virgos a Virgo/two Virgos
Libra/Libras a Libra/two Libras
Scorpio/Scorpios a Scorpio/two Scorpios
Sagittarius/Sagittarius a Sagittarian/ two Sagittarians

Your expressions are all correct.
My only comment would be that we don't normally refer to them using a specific number (two Geminis).
- Hi, I'm a Gemini. And you are? I'm a Pisces.
- Hi, I'm a Gemini. And you are? I'm a Gemini too. Oh, we're both Geminis then.

You've got it really. They are not standard English words which people frequently use formally in the plural so I wouldn't worry too much. But you're right not to add -es to "Aries" and it sounds a bit better to talk about "Sagittarians, Aquarians, and Pisceans".

Just one additional note. We don't normally say "persons". We usually say people.
One person, two people.
It is possible to say "persons" in certain contexts, but they are relatively rare. One example: "The crime was committed by a person, or persons, unknown."
