Hi Alberto,
The two sentences are indeed quite similar. If you would like to differentiate between them, I would say it comes down to specifics and what you really want to mean.
1) 我什么书都喜欢看。
- [什么] essentially means "what(ever)" or "any"
- In your example, the translation would be, "I enjoy reading any kind of books."
- Another example: A flight attendant asks, "您要喝些什么?" If you're fine with anything, you can reply with "什么都行" meaning "Whatever/Anything is fine."
- I would say that because [什么] is less specific, or more general, you can use it across many varying contexts. In a sense, it is more flexible than [所有].
- In the flight attendant example, native speakers are more likely to respond with "什么都行" than "所有的都行" (this is if they really don't have a drink in mind, of course :))
2) 我所有的书都喜欢看。
- [所有] = "all" or "every"
- English translation: "I enjoy reading all kinds of books."
- [所有] is more specific in that it refers to "all" types of something, nothing excluded.
- Example: "所有的人都到了” translates to "Everyone has arrived" Here, the use of [什么] would not make sense, because it does not specifically refer to ALL the people.
To sum it up, there are some cases (i.e. your books example) in which both terms may be interchanged without significantly affecting the meaning. Then, depending on the level of specificity your message requires, there will be instances where only one would be correct, or more commonly used than the other.
I hope it helps! Good luck :)

They are almost the same for the meaning but the sentence 1 is more idiomatic than the 2.

你不知道这两种结构的区别,说明你不能区分“什么”与“所有的”之间的区别,好好的去搞明白这两个词的意思吧。不要相信这两种结构意思是相同的说法,那是不可能相同的。

In this case it might depend on your interpretation. They seem to have the same meaning, however, the second one: 我所有的书都喜欢看, might be read as: I love to read all of the books that I have( as in I do not have a preference, i like all of them). The interpretation might differ because you put 我 at the beginning of the sentence, which in this sentence might be read as have: 我所有的书: all of my books. So if you want to have exactly the same meaning I would suggest leaving out 我. Example:( 我)什么书都喜欢看。所有的书都喜欢看。Hope this helps
