Is the sentence "This work is an oil on canvas" correct? What about "This is an oil on canvas painting"? Are there other ways of expressing this idea?

In the second one, most people consider it better style to write "an oil-on-canvas painting". It's a simple factual statement and you have probably included the two simplest and commonest expressions.
