Using the words: I appreciate it or My pleasure in Japanese?
I know that in Japan people are very humble and respectful, always trying to be polite, in most cases. I also know that customs that take place in America do not in Japan; such as holding a door open for a lady to give example.

So I was wondering, is there a word in Japanese that is used similar to "I appreciate it" or "My pleasure" ?
If so is it weird to use? How would you use it? Or would that be odd to say? Should be completely taken out of dialog? So forth?

It's natural to use such a phrase in that case.
We generally say “ありがとう” or “どういたしまして”.

I think that 感謝（かんしゃ）しています should be fine with its meaning being something like "I am grateful".

those words you mentioned are normal to use in daily life in Japan, not weird.
if someone do something to me i will say to the one 'ありがとう or 感謝します (Thank you)' or more polite way 'ありがとうございます (Thank you very much, I appreciate it)'. if someone want me to do something and when i will answer with 'OK, with pleasure' saying 'いいよ or よろこんで' so please use those phrases even in Japan. we are very happy to hear that and we feel you are polite!
