Is the word "freezing" using correctly in the following sentences? 1. Hope you are enjoying the freezing in (somewhere)? 2. My hometown in Mexico is freezing in winter.

The first one is incorrect. The second one is correct. What do you mean by "freezing in"? Are you trying to say "snowed in"?

1. Wrong. It should be "Are you enjoying the freeze?" meaning "are you enjoying the extreme cold?"
