'What with it being,' effectively means 'As it is ...,' for example 'What with it being Monday, which of us will get the takeaway tonight?' = 'As it is Monday, who will get the takeaway tonight?' (Here the situation is that this couple usually or always have takeaways on a Monday night.) In the dialogue above Monica simply means that, of course her Grandmother would hate it because she would hate being dead.'
