meaning of 그놈의 콩깍지... Could it mean [My Love]?
If said to another person, could it mean something like [My Love]??
Literally it would be like [My little bean pod] or something but that sounds weird in my opinion...

그놈의 콩깍지 => That love thingy blinding people! / That thing called infatuation!
콩깍지 can't be translated as "my love" or any such endearing term.
It describes the behavior and emotional state of an infatuated person from a third person perspective
It doesn't mean love itself, and no one in love ever thinks their love has anything to do with 콩깍지.
그놈 is like "that(그) guy(놈)", "that jerk", or sometimes even "that (goddamn) thing".
It is a (mildly) derogatory term for a male person, but is also used for things too when one resents something.
그놈의 is thus a disparaging version of the demonstrative pronoun "that" (also 이놈의=this, 저놈의=that), indicating the speaker is unhappy about what follows (however, people also say 그놈의 out of habit, or sometimes even with endearment, just like "mother----er" can sometimes be used with fondness).
콩깍지 is a bean pod but it primarily describes how an infatuated person cannot see things objectively.
A bean pod clearly shows the presence of beans in its bulging parts, but you still can't see the beans, hence the meaning.
Typically we say 콩깍지가 씌었다 (The wool has been pulled over his/her eyes (by love)), but 콩깍지(야) is enough.
The word is so common you wouldn't be a Korean if you don't think "infatuation" on hearing those three syllables.

콩깍지 is usually used as 콩깍지가 씌여, which literally means [covered by a bean pod].
The English phrase [Blinded by love] has quite similar meaning.
[그놈의 콩깍지] can be translated into [Jeez, you are blinded by love]
