In these songs, "take a bow" is an idiom.
Usually, when someone has PERFORMED or ACTED, they "take a bow". See the picture:

In Rihanna's song, she means that her lover was ONLY ACTING like he loved her. It was a PERFORMANCE. FAKE. FALSE. She is using sarcasm:
"Take a bow! What great acting! I almost believed you REALLY loved me. But you were only 'acting the part' of my lover."
When people say, "Take a bow" this way, they usually clap and make a sarcastic face. It means: "I don't believe you. Now you can stop pretending and tell me the truth."
In Madonna's song, it is a little different.
The bow comes at the END of a play. Here, "take a bow" means it is the end of a relationship. And, yes, she means both people pretended -- acted -- like they were in love SOME of the time. Maybe they started really loving each other. But over time, it got old. They began to ACT LIKE things were the same. But they can't act anymore. "The show is over." The relationship can't go on this way. Both know the truth. It's time to stop pretending and just "Say goodbye."
"Take a bow!" is also said when a friend does something clumsy. For instance, if my friend comes into my house and trips on the doorstep into my arms, I may laugh and say, "Take a bow!" It's a joke that implies he meant to do that, as a funny performance for me.
