play&use will be fine，hold is not suitable.

Yes,correct.I'm not prefer "paly with",it sounds odd.

"play with their phone" sounds weird in English. I think your translation "use their phone (too much)" is good. Or maybe "spend too much time on their phone"?
The Chinese sentence would sound better this way ：其中，79.8%的人因为自己玩手机而感到愧对家人和朋友。

sounds a little weird to me. you can just know what it means , do not speak exactly like that.
有78.9%的人觉得很对不起家人和朋友们, 因为（经常）玩手机 。 this sounds better to me （native ， was born in Beijing ）
