Hi, there
If someone says in a college class WhatsApp text group “I can’t make it to class today. Can someone take notes for me?” , should I say “I can’t make it today either. I’d also like some notes, if someone could DO IT” or “... I’d also like some notes, if someone could TAKE them for me”
Can I use “do it” in this case or should I say “If someone could take them”?

Both of these are acceptable. If you say "do it" you are referring to the action of "taking" and if you say "take them" you are referring to the notes.
Personally, I would say "if someone could take them for me as well"
