Di solito si risponde con: "Buona giornata anche a TE" in situazioni informali o "Buona giornata anche a LEI" in situazioni più formali.
Comunque la domanda corretta sarebbe: "cosa rispondere a una persona che dice 'buona giornata'?"

Che COSA si risponde QUANDO una persona dice "BUONA giornata"?
Si risponde con formule analoghe a quelle usate per rispondere, in francese, a "bonne journée". Le più usate:
"Grazie, anche a te" ("Merci, à toi aussi") - informale, a una persona
"Grazie, anche a Lei" ("Merci, à vous aussi") - formale, a una persona
"Grazie, anche a voi" ("Merci, à vous aussi") - a più persone
