"The trucks ground up and away heading out of it all and the peasants plodded along in ankle deep dust" What "The trucks ground up and away heading out of it all" means here. I'm reading a story by Earnest Hemingway name "Old Man at the Bridge."

You're reading an advanced piece of literature. Ernest Hemingway and other classic, famous novelists use English metaphorically and even make up their own phrases. A prime example is the famous Irish James Joyce whom even English people find difficult to understand. This sentence basically means the trucks revved up (ground here means 'grind themselves up' - heavy trucks starting up) 'heading out of it all' - heading out means leaving - leaving that place behind.
