Hello! I have been teaching on italki for about four years. Based on my experience, I believe that students who thoroughly study textbooks learn to speak beautiful and good Japanese the fastest. On the other hand, students who focus only on conversation tend to end up with messy grammar, forget words easily, and use a lot of slang, resulting in strange Japanese.
Therefore, my conclusion is that the best approach is either to study a textbook like GENKI with a teacher or to study it independently while practicing conversation with a teacher.

Had a great lesson with Cherry Sensei today. We did free conversation for the first half then read a book for the second half. She was very helpful in getting me to understand the story. Cherry Sensei always comes up with interesting conversation topics. There's never a dull moment!
