I know "minute" and "minutes", but could you tell me why the meaning changed after adding an "s"?
I guess is there a story behind it?

"Minute" can have two meanings, depending on the pronunciation: very small, or 60 seconds.
"Minutes" can also have two meanings: groups of 60 seconds, or notes from a meeting.
Is there a specific sentence that has confused you? It's difficult to help you without context.
