The words *barely controlled* Means the assistant could not help but feel frustrated, basically meaning that this sentence suggests that the assistant was frustrated.

I think it shows that the sales assistant is close to losing his patience with his customer (i.e. patiently counting to ten, barely controlled desire) and is extremely annoyed and frustrated (clawing his own face). Hope that makes it a bit clearer!
