Fruit-cake with bird cherry flour.
100 g unsalted butter
80 g white sugar (if you like more sweet put more sugar)
1 teaspoon vanilla extract
2 large eggs
30 ml milk
50 g sour cream
50 g bird cherry flour
200 g self-raising flour
1,5 teaspoon baking powder
0,5 teaspoon baking soda
1 handful of raisin
Since last night we need to mix the sour cream, milk and bird cherry flour. And then put it in the fridge till morning.
In the morning we need to take out butter, eggs, the sour cream with the bird cherry flour of the fridge for a couple of hours. Because these ingredients must be at room temperature.
Let’s get started on the dough. Preheat the oven to 180ºC.
Make the mould to be baked with paper for baking. My mould is 26x11 cm.
Then beat butter with sugar and vanilla extract. Do it 2-3 minutes. Then add eggs and mix. And add the sour cream with the bird cherry flour. All these ingredients mix by mixer.
In another bowl we mix flour, the baking powder and the baking soda. Put these dried ingredients in wet ingredients and mix it. Then add raisin.
To put our dough in mould and bake 30-35 minutes.
After baking we can decorate our cake by melted chocolate with a coconut shaving.
