There are for instance Pengun Readers books. The books are deliberately simplified. You can pick and choose any sort you like.

I really don't know what to recommend. I had a thought like you once. I went to library and searching any book I like on English literature bookshelf by myself. I picked them up and screen the content. If I can understand more than 80%, I will read it. In my opinion, it's really hard to recommend a good book for others because each person has different taste. I knew this is not really help. I just want to share my experience.
