I like working with Lingolia https://espanol.lingolia.com/es/
There you get first the explanation, verb conjugation and then a page of exercises.
I am reading that you would like to do loads of exercises. Is it because you memorise well by repeating exercises and that gives you a sense of competence and efficiency in your learning?
In my experience, doing loads of grammar exercises can be very helpful for clarifying patterns and structure. Then, if you want to take that knowledge to the next level: actually understanding, talking, reading and writing, you would need to use other strategies besides doing exercises.
With my students, when we do exercises during the lesson, they usually do very well. But then, when I ask them to speak or write using that knowledge, they are not necessarily able to transfer it. We need to do other activities that involve other parts of their brain for the learning to be fully available for them.
I apologise in advance for giving you advice that you didn't request. And I hope it has been helpful in some way. I guess I just wanted to contribute to your learning and give you reassurance that you can find other ways of learning, even if you don't find the ideal book with as many exercises as you would like.
Good luck with your learning and feel free to book a lesson if you would like more language support :)
