I'm trying to find a resource that will allow me to both read and listen to Persian at the same time. For example, a site that has radio transcripts in Persian and also the actual radio episode available for download? Or a site that has audiobooks as well as the Persian book itself?

You can listen to English music and see Persian translate. I think best approach is that you find a native Persian and make a collaborate to learning. You can learn and you can search and find best resource to learning with your partner.
