So my question is, are there languages whose writing is so different that this does not work?  Apparently it is not just English, but what about languages with completely different types of symbols-  how does such an ability work in a language like that?

I guess the trick is of being the first and the last letters in place and something in the middle.

Yes, it's true and it's easy to read. I've read posts like this one in Russian language and the same thing, it's easy. Some people even change some letters in the words into numbers to make the words more difficult to read.
