which one is correct?

I couldn't help my stress.  

 I couldn't help not being stressed out

Neither. I think you mean "I couldn't help being/feeling stressed (out)".

The first one sounds unnatural. The second one is grammatically correct, but it means that the person was NOT stressed (so it's the opposite of the first one). I think you intended them both to mean the same thing.
