2. Bort szeretnék.
3. Bort szeretnék kérni.
4. Szeretnék bort kérnI.
Or something else?

Bort kérnék. I think the shortest way to ask for wine politely is to use "kérek" in its conditional form "kérnék". Also, it sounds more natural and fits the situation better than using "szeretnék". Hope it helps!

The most polite is the 3rd or 4th but the 3rd has the additional meaning that the thing what you want is wine. Usually the 3rd is an answer when you can choose from more things. E.g.: Sört vagy bort szeretne inni?
