I might go against the prevailing position here, but I beleive that you need to talk the talk instead of drilling into such deep stuff. 

just have fun and "bump you way through the language reality". Don't worry too much about the intricacies. You'be butchering Russian for a long time and people around you will love it (if they are not jerks). I absolutely adore any person who's learning Russian and making money here in Moscow. They are THE MAN.

Concenring you questions. there's two options: 1) formal - пожалуйста, (you re welcome), 2) informal-ish - не за что - welcome. Just use them and move one. The teacher' had to impregnate you with the vision that these are "un-learnable" stuff. It's the language quirks. don't try to fathom it. It's the language, it's not grammar.

Говоря "ничего" в ответ на "извините", мы имеем ввиду "ничего страшного", то есть человек, который перед нами извиняется, не доставил нам никаких проблем или неудобств. Например, если кто-то наступил Вам на ногу и извинился, можно ответить: "Ничего."

Когда мы говорим "не за что" в ответ на "спасибо", мы имеем ввиду, что оказание какой-либо услуги или выполнение просьбы ничего нам не стоило, ни морально, ни физически, то есть благодарить (говорить "спасибо") буквально не за что.

1. - Прости, что опоздал, застрял в пробке.

- Да ничего, я пока погулял, погода все равно хорошая.

2. - Спасибо, что помог мне подготовиться к экзамену.

- Не за что, всегда рад тебе помочь.

When it comes to answering to 'Спасибо', the correct (and the most conventional) answers will be:

- Пожалуйста (You are welcome)

- Не за что (Not at all)

- Вам (тоже) спасибо (Thank you too)

'Не за что', 'Ни за что', 'Ничего' are different phrases.
