저 is the original form and 제 is a variant form used for certain contexts.

- 저는 학생입니다.

- 저를 용서해 주세요.

- 전화한 사람이 저예요 / 저 아니에요.

- 저도 갈게요 / 저부터 할게요 / 저까지 갈 필요는 없죠 / 저조차도 몰랐어요, etc.

- 이 일은 제가 할 수 있습니다.

In the above usages, the alternative form is not acceptable - i.e. 제는, 저가, 제예요, 제 아니에요 are wrong (although some people mistakenly use 저가).

There are other use cases which involve contractions.

- [with 에게] 제게 전화해 주세요 = 저에게 전화해 주세요 (제게 = 저에게. Both are accepted).

- [possessive 의] 이분이 제 형이세요 = 이분이 저의 형이세요 (제 = 저의. Both are good).

- [meaning 자기] 제 일은 제가 해야 한다 = 자기(의) 일은 자기가 해야 한다 (제 = 자기(의) = "one / one's" - represents someone mentioned earlier or any person in general). 

I think these are all the different cases.  Of these, the last one meaning 자기 is probably the trickiest one.

By the way, except for the last case for the meaning of 자기, 나/내 may be substituted for 저/제 in informal contexts.

(i.e. 저 = 나, 제가 = 내가, 저의 = 나의,  제 = 내, 저에게 = 나에게, 제게 = 내게)
