There is a sentence in our English book:What impressed me most was that the song I used to learn .

Can I change “what” into “which”?

No, because 'What' is a pronoun here. It is the subject of your sentence, meaning 'The thing which....'.

If you were to replace 'What' with just 'which', the sentence would have no subject. The relative 'which' cannot be the subject of a sentence.
