You can say:

My eyes are red. (in the present moment)

My eyes get red when I drink too much sake. My eyes turn red when I drink too much sake.

Get red or turn red are better choices than go red.

We also use an expression:

My eyes are bloodshot. (when eyes are red, especially after drinking, crying, allergies or not sleeping)

I would say my eyes turned red (if in the past) or my eyes are turning red (present continuous, right now).
