because noodles r long,they symbolize long life.the Chinese believe that if the birthday person eats noodles on this special day,he will enjoy a long life ahead.this is why birthday noodles r often not cut.they r stretched from a single piece of dough into long strings of skinny noodles.when u eat the noodles,u should try not to cut them with ur chopsticks either.only when u cant't stuff any more noodles into ur mouth,can u bite them off.

i think there is only one kind noodle used in birthday.people always call it 长寿面( chang shou mian).
but maybe people from south or north of China may have different tastes on their noodle,im not sure..ha ha
