The easiest langauge to learn is your native one, and the hardest is whatever language you have absolutely zero interest in learning.

The easiest is the one for which you can find plenty of practice material, songs, books, films and lots of native speakers to bear with you while you're learning.
The hardest is the one you're trying to learn on your own of for reasons you did not choose (eg learning one language for business when you'd have preferred to learn another language)
