If there is a dispute between two parties, one has the option to sue the other and vice versa. The resulting "trial" could be expensive, so often they will resort to arbitration, binding or non-binding. In a trial a judge presides and a jury decides, but in arbitration the referee may decide. Arbitration procedures vary, but certainly all are less formal, and less expensive, than hiring lawyers.
