I'm just trying to understand this tense thing. Bob - Jim, I told you this. Jim 1. I would've remembered if you told me that. Jim 2. I would've remembered if you'd told me that. Which one is correct?

They are both correct, but I prefer #1. The reason is that #2 is a sentence using two contractions and seems not too natural. Of course, "I would have remembered if you had told me that" is also perfect English. The use of contractions (you'd, would've) just makes the statement flow faster.
