The dance must be done in sneakers,for dancer's safety. if you want to use 'doing' you can write as Doing the dance must be in sneakers,for dancer's safety.

It should be: The dance must be done in sneakers ... It's always the infinitive form after a modal verb when it is present tense. This sentence is passive voice, so you use 'be' + 3rd form.
