In the book Madagascar,it says"Rico sneaked up on the captain and karate chopped his neck,kicking him out cold."What does "karate chopped his neck" mean?So here the karate should be the name of a penguin or something?

No, karate chop is supposed to be the name of a karate (martial arts) move. I'm not entirely sure what move...but the simplest way I can think of explaining it is that Rico hit the captain in the neck...
