please can anyone explain this sentence for me. Vaccines of nervous-tissue origin are still used in some parts of the world.

Nervous tissue refers to the brain and the spinal chord. So the vaccine is taken from (originates from) this tissue. The vaccine would be taken from the brain of an infected animal and used to immunise people against a disease, such as rabies.
