Are these sentences natural? Or how would you say? I don't want to pontificate about something that I don't know I don't want to state my opinion about something I don't know. I don't want to give my opinion about something I don't know.

yes, they are all good. '...give my opinion about' is more natural, but both are fine. You could also say 'give my opinion ON'.
