The difference is a legal concept. Evidence is a fact that points to a person in court being guilty or not guilty. Proof is level that the evidence has to reach to convince either the judge or the jury to convict the accused person. In other words, I can have evidence, but not enough for a proof of conviction. In anything other than a legal setting (courtroom, for instance), evidence and proof are many times considered to be the same thing.
