All/ Every Temperature plays an important role in almost >all< fields of science, including physics, chemistry and biology. In this sentence why i cannot use ''every'' instead of ''all''?

you could, but you would need to change 'fields' to 'field'. . . . in almost every field of science . . .

'Every' counts all members singularly. 'All' bunches them together. You can say "..every field..." or "...all fields...", but not "...every fields..." or "...all fields...".
