Since tents are for use by people, it's not necessary to write 'persons' or 'people'. Therefore, 'This tent sleeps five' or 'This tent can sleep five'. Although if you want to use the word, 'people' is more usual in this context - 'persons' is extremely formal, most often used in legal texts.

I would say "people" instead of "persons," but otherwise it's fine.

Both are correct but I would change 'persons' to 'people' as in this context 'persons' is a bit formal.
