Only the second is correct, but would be better as "Let's stay friends." The reason the first one is incorrect is because "friend" is referring to "us" (which is plural), and thus must instead be "friends" instead of "a friend". In any case, though, "Let's split up as friends" isn't really a phrase I've ever heard used. Usually people say, "Let's still be friends".
