It means you don't find it particularly valuable or important. -What did you think of the new book? -Eh... I didn't think much of it, to be honest. This means the book was not too special or groundbreaking. :)

If you don't think much of something, you don't have a good opinion of it. In this case it means you don't think it's a good idea.
