The one that seems most natural to me is: "I can not believe we are graduating tomorrow." Personally, the way I'd say it is: "I can not believe that we are graduating tomorrow." I'm not sure how grammatically correct this, but when I'm speaking this is how I'd say it. I hope this helps.

I would also say: "I cannot believe that we are graduating tomorrow." Frequently English speakers omit the "that" as you did and simply say: "I cannot believe we are graduating tomorrow."
