Le mot 'it' signifie 'il' ou 'elle', quand on parle d'un objet inanimé (ou d'une bête). Le mot 'that' signifie ça, cela, celle-là, celui-là.

it can refer to any unspecified thing,or being whose sex is unknown.I saw it - what it is we don't know without any context to it. I can't tell if it is a male or not. that refers to something specific. I saw that! said Mum to little Joe. Don't do it again. look at that girl in the short skirt. That is a wonderful thing you just did.
