Which would be the best way to express this?
The main idea is to express that an individual belongs to small group of people with a specific characteristic:
- He was one of the warmest people I have ever met.
- He was one of the warmest persons I have ever met.
If there are better and more clear ways to express this idea I would appreciate to know them.

'Persons' is an old form of the word 'people' and is no longer in common use, as Eric noted.
'People' is effectively used the same as 'personas' in Spanish.

"People" is correct. "Persons" is only used in very formal or legal contexts. :-)
