All are fine, you might also want to say "my arm is itching".

I have itch on my arm - I have an itch on my arm or I have an itchy arm.
I can't stop scratching my leg because it itches - Yes
By the way, reading about itching gives you itches!

They are all fine, except that you need to say "I have AN itch."
