As for letters, it takes several days to send to the destination.
I am wondering,"it" or they?, it refers to what ?
or this is a fixed structure?

in this sentence "it" means the process of sending letters. there are many examples of when we use "it" to mean something it would be redundant to say. "it looks like it will rain" meaning the weather
