"these" is a pronoun relating back to something referred to in the previous sentence (eg rocks?). The sentence is a bit awkward. An alternative using the active form of the verb instead of the passive might be clearer. For example: By studying/from the study of/ these (rocks?) we learnt so much about the interior of the earth.
