Is this correct, 'We're happy to have English everyday.'? Is this correct, 'We're happy to have English everyday. Because Mr. White's class is always interesting'? Can you give some examples about this structure 'sb + be + adj + to do '? Thank you!

It's OK. "to be + adj +to + verb" is a good construction to use with many adjectives which express a personal reaction. e.g. I am sorry to tell you the bad news but..." If you have English Grammar in Use, check Unit 65C.
