called while we / was calling while we Matt called while we were having dinner. Can I say in this way - Matt was calling while we were having dinner. ? (He Called all the time while we ate)

If you want to say what's in the parentheses -- he made a habit of calling during dinner: - Matt would [always/often/usually/sometimes] call while we were having dinner. The adverb in the [brackets] is optional. Add one for clarity, if needed.

Not really, because "calling" is typically an event with a point, or short at least, duration. You might however say something like "Matt was driving home while we were having dinner" to indicate the two activities were going on over the same period.

Yes you can write like this but the second one is more appropriate.first one is for he just called you once or called you over phone.
