I would probably form the sentence this way ''Even finding the largest change, was difficult for me''

What about "even" -- what do you want that to modify? Anyway, I might go for "It was difficult for me to [even] find a change in [even] the largest thing".

Please note that "largest" modifies the thing, instead of the change.
