Which is the correct form? The thing that I like the least is... or The thing that I least like is...

Both sound fine to me (native speaker). The first is easier to say. I think the "the" gets inserted to help the rhythm. "I like least" also feels awkward. But all three are fine.

They are both correct. The thing that I like least is the cost of the lessons. = The thing that I least like is the cost of the lessons. (a little stiff sounding though) = The thing I like least is the cost of the lessons. = The thing I least like is the cost of the lessons.
