Are both sentences the same? I tried to tell him, but he wouldn't listen. I tried to tell him, but he didn't listen.

The sentences are essentially the same. The main difference is that 'would not' implied he didn't want your advice/information and actively ignored it. On the other hand, 'did not' suggests that he didn't follow your instructions for some other reason - he failed to listen out of incompetence rather than malice. Another minor difference is that "didn't listen" means that you did actively tell them something, but they just didn't act on it. "Wouldn't listen" might suggest that you never got to tell them: they kept interrupting you, hung up the phone, ran away...
